Most people have hobbies or places they like to hang out at and unwind after a long week at work. I tend to stay home and not engage in social events. Working 50 hours a week, talking to people all day, every day, social events have become no longer my happy place. At home, I don’t have to make small talk, I can sit on the couch and not think about anything. I can bake and cook without interruptions.

At Life of a Wyomingite, I will bake and cook my way through boredom, while still being creative.

Without further ado, the first “I’ve made that!”

I stumbled across this recipe when searching for banana bread recipes on Pinterest. My roommate, at the time, was wanting to begin baking, and luckily I had a lot of bananas in the freezer. We made it, and 24 hours later, all of the mini loaves were demolished! They are so good! Living at high altitude, I was worried that the dough was going to be too watery or would need to bake longer. However, the batter turned out perfect, and the cooking time was too.

Verdict: 10/10 would bake again (and did)! I would add more chocolate chips than recommended.

A Little Note of Inspiration:

If a recipe has a lot of ingredients or steps, it is okay to slow down and bake at your own pace. I recommend to take things one step at a time and read through all of the steps before beginning. It is important to measure out, or at least gather, all of the ingredients before beginning; this cuts down on time searching for baking powder in the back of the cupboard.
