I want to switch it up and create a new type of blog post called “What I Do” to give you ideas for meals or snacks. This post will not be the use of a recipe, but rather a way to elevate the main component.
Diving right in, I like to make taco meat, and use it for different meals throughout the week, so I don’t get bored and end up wasting food. I cook a pound of ground beef and make taco meat. I try not to add anything because I do not like to pigeonhole myself and my meals.
I live alone, so I try to stick to meals made for one person rather than meals for more than two. The prepping of the taco meat allows me to create single meals without having to have the same thing twice by force.
One of my favorite ways to make taco meat is to use it for nachos! Nachos are very quick to make and easy to have any time of day. I layer the nachos by having tortilla chips on the bottom, meat in the middle, and cheese on top. Then I microwave for about 30 seconds to melt the cheese. After the cheese is melty, I will then add toppings such as salsa, and sliced black olives. Voila! A meal/snack using taco meat.
The second way I use taco meat is inside a bell pepper. If you have leftover rice, beans, and veggies, you can stuff them into the bell pepper, too. What I like to do is cut off the top of the bell pepper first. I remove the bell pepper top, salt the inside and roast the bell pepper for 20 minutes in a preheated 400-degree oven. Then I layer in what I want. I typically layer black beans, meat, and cheese. Depending on the size of the bell pepper, there can be more layers. Finally, I put the stuffed bell pepper back into the oven for about 10 more minutes.


The third and final way I use taco meat, of course, in tacos and burritos. Living alone has taught me to make a single-serve taco bar. Tacos and burritos are the usual way to use taco meat.
